How to Make Auntie’s Beef And Barley Soup. Warm and Hearty. Yum.

I was thinking the other night about being an Auntie and all the rolls that come along with that title. One that I cherish is sitting down and enjoying a great meal and conversation.

Now, don’t confuse me with a cook… Lol…Um, no. I’m a sometimes, if-I-wanna-but-don’t-expect-too-much, kinda cook. Preparing and cooking is just so messy and takes so long (insert whiney face here…). Yeah, I’m a bit of a princess that way. I like other people to cook–anyone, really.

I do have my cooking exceptions, especially in the winter. I want to share one of them with you today. It’s beef and barley soup. So chock full of veggies and hearty warm broth… I love it. Yum. It has your veg, meat, and grain all in one.

So here goes….

My Beef and Barley Recipe–but I should warn you–I’m not very good at measuring. If you taste it and it needs more garlic–add more. Same with carrots and stuff, put in as much or as little as you like–Have fun.

Auntie Lesson:

Over your lifetime, you should perfect a few recipes as they come in handy when no one else will cook for you. LOL. Eat your veggies!! Consider this a warm hug from Auntie. Enjoy and be well.

    1. Hi Pooja! Oh, the soup was so good. I froze a bunch of individual portions. Today I made roasted butternut squash and carrot soup….it’s cooking right now…. aroma of cumin and nutmeg…Sooooo good. 😋 thanks for stopping by. I hope it doesn’t get too snowy and yucky in the Niagra area for you.

      1. Yummm! I made some butternut squash soup a couple of days ago too and it was delicious 😊 Niagara is never too snowy so fingers crossed that this winter won’t get too crazy!
